How to Use

Ideal for enchilada roja, chile colorado, pozole rojo, adobos, soups, marinades, and salsas. Mix with Guajillo or Ancho to add depth and complexity.

Preparation

  1. Wipe clean, destem and deseed.

  2. Toast lightly on a dry pan (10–15 sec per side) until fragrant.

  3. Soak in hot water 15–20 min.

  4. Blend into a smooth purée (strain for extra-silky sauce) or grind into powder.
