- 2 cans of whole Poblano chiles en salmuera (940 g)
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup corn kernels (fresh or canned)
- 1 cup Mexican crema or sour cream
- 1/2 cup shredded cheese
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions:

Prepare the Poblanos:
- Rinse the Poblano chiles under cold water to remove excess salt.
- Cut each chile into thin strips (rajas), discarding any seeds.

Sauté the Vegetables:
- In a large skillet, heat the vegetable oil over medium heat.
- Add the sliced onions and minced garlic, sautéing until the onions are soft and translucent.

Add the Poblanos and Corn:
- Add the Poblano strips and corn kernels to the skillet, stirring to combine.
- Cook for about 5-7 minutes, allowing the flavors to meld together.

- Reduce the heat to low and stir in the Mexican crema or sour cream.
- Season with salt and pepper to taste.
- Cook for an additional 3-5 minutes, allowing the crema to warm through and slightly thicken.
