INGREDIENTS: Whole Poblano chiles, water, salt, sugar, citric acid, and 0.1% potassium sorbate (preservative).

Suggested Recipe: Rajas con Crema

Ingredients:

  • 2 cans of whole Poblano chiles en salmuera (940 g)
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup corn kernels (fresh or canned)
  • 1 cup Mexican crema or sour cream
  • 1/2 cup shredded cheese 
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions:

  1. Prepare the Poblanos:

    • Rinse the Poblano chiles under cold water to remove excess salt.
    • Cut each chile into thin strips (rajas), discarding any seeds.
  2. Sauté the Vegetables:

    • In a large skillet, heat the vegetable oil over medium heat.
    • Add the sliced onions and minced garlic, sautéing until the onions are soft and translucent.
  3. Add the Poblanos and Corn:

    • Add the Poblano strips and corn kernels to the skillet, stirring to combine.
    • Cook for about 5-7 minutes, allowing the flavors to meld together.
  4. Add the Crema:

    • Reduce the heat to low and stir in the Mexican crema or sour cream.
    • Season with salt and pepper to taste.
    • Cook for an additional 3-5 minutes, allowing the crema to warm through and slightly thicken.
  5. Finish with Cheese:

    • Sprinkle the shredded cheese over the mixture, gently stirring until the cheese is melted and well combined.
  6. Serve:

    • Serve the Rajas con Crema hot, either as a side dish or as a filling for tacos, quesadillas, or burritos.
